Papalote Brings a Taste of Mexico to Newcastle West
For Newcastle foodies, Flotilla and Humbug are names that signal thoughtful cooking, warm hospitality and an unwavering attention to detail. Papalote, the Mexican restaurant and agave bar from the same team, has quickly joined that conversation, carving out its own identity while staying true to the values that made its predecessors so loved.
Opened in late 2025 by long-time friends and co-owners Eduardo Molina, Michael Portley and Stephanie Wells, Papalote occupies the former Edwards site on Parry Street in Newcastle West. The once-industrial space has been completely reimagined, softened with earthy tones, timber finishes and vibrant murals by local artist Ruby Laxton. Custom booths and banquette seating wrap around the open kitchen, the beating heart of the restaurant.
“This is the corazón of our restaurant, and I want everyone to feel like they have a seat at the kitchen table,” says Steph Wells, co-owner and creative director.
Under the guidance of head chef Michael Portley, the menu draws inspiration from Mexico’s diverse culinary regions and is structured around three sections: cold & raw, including oysters, ceviche and pineapple aguachile; antojitos, with tacos, tostadas, tamales and all things masa; and al carbón, larger proteins cooked over charcoal.

Signature dishes include Wagyu Hanger Carne Asada with Guajillo Adobo, Cochinita Pibil slow-cooked in a traditional brick pit oven, and Pink Snapper and Pineapple Aguachile. Corn tortillas from Marydias anchor tacos such as Al Pastor or Lengua with Salsa Cruda, while Portley and his team continue to develop an in-house masa program using heirloom corn for small-batch specials.
Since opening, the menu has continued to evolve, with diners quick to make their favourites known. “The big standout that we cannot get enough of is the King Prawn Tostada,” says Steph. “It’s the perfect two-bite snack, a crispy fried corn tortilla topped with burnt onion guacamole, poached Yamba king prawns, pequin pepper chilli oil, cucumber and chives.”
The drinks program, led by co-owner Eduardo Molina, places agave spirits front and centre, supported by a refined cocktail list and an extensive selection of Tequila, Mezcal, Sotol and Raicilla sourced from Mexico’s finest estates. The wine list spans Latin America and Spain, alongside innovative Australian producers.
Newcastle’s response to Papalote has been emphatic. “Newcastle has welcomed Papalote so graciously,” says Steph. “We’re booked out weeks in advance for Friday and Saturday early sittings. It’s absolutely wild, and we’re incredibly grateful for the love and support.”

Central to transport, accommodation and surrounding businesses, the area has proven an ideal home. “Having such incredible accessibility means guests can easily visit us,” says Steph. “The cul-de-sac location is perfect. Soon guests will be able to dine or have a drink al fresco with their pup on the patio, which has been beautifully landscaped by Sustainable Surrounds.”
Looking ahead, Papalote is preparing for its next chapter. Early 2026 will see the opening of Coyote, a more casual cantina and function space within the venue. “It’ll be a walk-ins-only bar with a small menu,” Steph says. “Think Mexican hotdogs, classic ceviche, margaritas, chicharrón and pool. Perfect for something a little looser and more spontaneous.”
The team also plans to host mezcal tastings and celebrations marking key Mexican festivities throughout the year, deepening Papalote’s role as both a dining destination and a cultural hub.
For fans of Flotilla and Humbug, Papalote offers a familiar sense of care and creativity, expressed through a different lens. For everyone else, it is an invitation to settle in, share plates and experience one of Newcastle’s most dynamic and soughtafter places to eat.
